  • 1 cup plain breadcrumbs
  • 1 large egg
  • 1/4 cup parmesan cheese
  • 2 garlic cloves (pressed)
  • 1 tablespoon olive oil
  • Fresh basil (chopped)
  • Italian seasoning

Instructions

  1. Preheat the oven to 375°F. Line a baking sheet with non-stick foil.
  2. In a skillet, heat olive oil over medium-high heat. Sauté garlic for 1 minute, then add shredded zucchini.
  3. Cook for about 5 minutes until water evaporates; drain excess moisture using a colander.
  4. In a mixing bowl, combine breadcrumbs, egg, Italian seasoning, basil, parmesan cheese, and the zucchini mixture until well blended.
  5. Form approximately 20 meatballs using a 2 Tbsp scoop and place them on the prepared baking sheet.
