  • 2 medium zucchini, sliced lengthwise
  • 1 tsp dried oregano
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1 cup marinara sauce
  • Fresh basil for garnish

  1. Preheat your oven to 190C (375F) and lightly grease a baking dish.
  2. Layer the zucchini slices at the bottom of the dish and sprinkle with oregano.
  3. Spread half of the ricotta over the zucchini and spoon half of the marinara sauce on top. Repeat with remaining ingredients.
  4. Top with mozzarella cheese to create a deliciously gooey topping.
  5. Cover with aluminum foil and bake for 25-30 minutes. Remove foil and bake for an additional 10-15 minutes until golden.
  6. Allow to cool briefly before serving, garnished with fresh basil.
